Sustainability is the undercurrent of Whimsy. Talus tries her best to be eco-friendly. She uses biodegradable septic-safe dish soap, composts scraps (if any), enjoys reusing, and visits the recycling center to drop off cardboard or bubble packaging. These days, it’s practical to be as eco-friendly as possible.
Talus’ menus are curated around locally sourced ingredients from Corvallis / Philomath. She browses the nearby farmstands and farmers’ markets. Consequently, her favorite stops are the Wednesday or Saturday farmer’s market downtown, or the Philomath market in the library parking lot on Sundays. The Tuesday Market in South Corvallis at Flicker & Fir is also a frequent stop. It’s a great way to fulfill your socialization quota. Thus, Talus uses many sources within a 10-mile radius. So, the closer the food is, the fresher, healthier, and higher the quality.
Unfortunately, fish and shellfish are off the plate. Talus has allergies to fish and shellfish, so she does not work with those materials. As much as she loves searing scallops or preparing salmon, she should avoid preparing creatures of the water.
